Ever since Eli has turned two, he has become simply crazy . We never know what we are going to find him doing when we have realized that he is no longer in our sight. A few of his favorites these days are opening the fridge to pour his own juice or milk (he manages to get some into his cup), sneaking into the pantry for a snack, or getting out the markers (using a stool) and deciding to draw a picture. The other day I came into the kitchen to find him wearing this pink headband while sitting in our kitchen drawer. He thought he was quite funny!!!

Indian Lentil dish
It was a rainy day today so we stayed in most of the day and decided to make a great meal . We've realized, since moving here, that we have started to add more animal foods back into our diets, so now we are trying to get our focus back to a mostly plant based diet. My brother, Rick, made this Indian dish for us in Rhinelander the last time he visited us there so we decided it would be great for today. It is delicious and extremely healthy!! Here's the recipe.......
Serves 10 (can easily be cut in half, but keeps great in the freezer!)
2 cups lentils
8 cups vegetable broth
3 tbsp olive oil or grapeseed oil
1 onion chopped
2 celery ribs diced
1 red pepper diced
1 clove garlic minced
1/3 c tomato paste
1/4 c flour
1 tbsp curry powder
1 cup swiss chard or spinach cut into small pieces
2 cups brown rice
In large pot, bring broth and lentils to a boil, simmer 45 min or until lentils are tender
While lentils are cooking, saute onion, garlic, celery, pepper until tender. Add chard or spinach, paste, flour, and curry powder. Stir and cook for few minutes.
Add sauted veggies to pot of lentils.
serve over brown rice

Thanks, Bernie
Bernie introduced me to the world of blogging...have to say it was easier with Bernie sitting right next to me. I'm still trying to figure it all out.
We had so much fun at danny and Cori's wedding and seeing all the family again. Eli is still wondering where all of you have gone.
We are back to the norm. We filled this weekend with a visit to the park and library. Taking a walk, baking cookies, running thru the sprinkler, and shopping.
